TAOS RABBIT
  • Ingredients
  • 1 medium sized rabbit
  • 2 tablespoons lard or vegetable oil
  • 1 large onion, peeled and diced
  • 2 quarts water
  • 1 cup white wine vinegar
  • 3 teaspoons ground red chili
  • 1 teaspoon salt
  • 1/2 cup cornmeal (blue or yellow)
Directions
  1. Cut rabbit into serving pieces
  2. Place in a large saucepan and brown meat in lard or oil. Add remaining ingredients and simmer, covered, for 1- 1/2 hours or until meat is tender. Add commeal gradually to pan, blending thoroughly
  3. Simmer for 10 minutes until sauce thickens
  4. Makes 6 servings.
