TAOS RABBIT
TAOS RABBIT
Ingredients
1 medium sized rabbit
2 tablespoons lard or vegetable oil
1 large onion, peeled and diced
2 quarts water
1 cup white wine vinegar
3 teaspoons ground red chili
1 teaspoon salt
1/2 cup cornmeal (blue or yellow)
Directions
Cut rabbit into serving pieces
Place in a large saucepan and brown meat in lard or oil. Add remaining ingredients and simmer, covered, for 1- 1/2 hours or until meat is tender. Add commeal gradually to pan, blending thoroughly
Simmer for 10 minutes until sauce thickens
Makes 6 servings.
