CHILE COLESLAW
  • Ingredients
  • 1 large head of cabbage
  • 1 mild fresh chile
  • 1 medium onion
  • 1/2 cup each white wine vinegar and water
  • olive or vegetable oil
  • sugar, to taste
  • 2 tablespoons olive oil or vegetable oil
Directions
  1. Shred cabbage
  2. Chop chile (remove stems and seeds) and onion very fine
  3. Add to cabbage and salt to taste
  4. Mix vine- gar and water, sweetened to taste, and stir in well with small amount olive or cooking oil
  5. Pour over cabbage mix- ture and refrigerate for an hour before serving.
