Tamarind Ginger Marinade
  • Ingredients
  • 1-1/2 cups water
  • 3 tablespoons tamarind concentrate
  • 1-1/4 cups mirin
  • 2/3 cup soy sauce
  • 1 /4 cup golden brown sugar
  • 2 tablespoons minced fresh ginger
  • 4 cloves garlic, minced
  • 1 teaspoon crushed red pepper flakes
Directions
  1. Place water and tamarind in a medium saucepan
  2. Cook over medium high, stirring constantly, until concentrate dissolves
  3. Add mirin, soy sauce, sugar, ginger, garlic and red pepper flakes
  4. Boil until mixture is reduced to 1-1/3 cups, about 15 minutes. Yield: 1-1/3 cups SUGGESTED USE: Remove part of this marinade and set aside to use as a dipping sauce
  5. It serves double duty
  6. Try this marinade on shrimp (1 hour), or scallops (1 hour) or salmon (1 hour).
