BEAN SALAD
BEAN SALAD
Ingredients
2 cups cooked pinto beans
2 cups cooked green beans
1 large onion, peeled and sliced thinly
2 cloves garlic, peeled and mashed
1 large sweet pepper, seeded and thinly sliced
1/2 cup sugar
1 teaspoon ground red chili
2 teaspoons salt
1/3 cup vinegar
1/2 cup oil
Directions
Combine pinto and green beans, onion, garlic, and pep- per in a large bowl. Combine sugar, chili, salt, and vinegar in another bowl
Slowly pour in oil, beating constantly. Pour over beans and toss thoroughly
Allow beans to marinate, covered, for at least 2 hours in the refrigerator before serving
Makes 6-8 servings
