CHICORY GRAPEFRUIT SALAD
  • Ingredients
  • 1 head of curly chicory
  • 2 large red grapefruit, peeled
  • 6 thin slices of a large round red salad onion
  • 1/2 cup vegetable or olive oil
  • 1/4 cup white wine vinegar
  • 1 tablespoon honey
Directions
  1. Using chilled plates, place the chicory leaves on each, artfully topping each with a pinwheel design created from the grapefruit sections, which have been carefully cut from the membrane
  2. Be careful not to allow any white from the skin to remain. Top each with the separated onion rings
  3. For dressing, combine the oil, wine vinegar, and honey and drizzle over each serving.
