APRICOT RICE PUDDING
  • Ingredients
  • 3 tablespoons raw rice
  • 1 tablespoon sugar
  • 1 quart milk
  • 1/4 teaspoon salt
  • 3/4 teaspoon cinnamon
  • 1/2 cup soaked dried apricots, diced
  • 2 eggs
Directions
  1. Wash rice and combine with all other ingredients except for the eggs. Separate eggs
  2. Beat egg whites until very stiff
  3. Add beaten egg yolks to egg whites, folding in gently. Add egg mixture to rice mixture, blending gently
  4. Transfer mixture to a baking pan or casserole and bake in a preheated 250F
  5. oven for two hours, stirring fre- quently so mixture does not stick
  6. Makes 6 servings.
