GREEN CHILE AND POTATOES
  • Ingredients
  • 1 tablespoon vegetable oil
  • 1 medium, chopped onion
  • 1 chopped garlic clove
  • 4 green chilies, chopped,
  • OR 1/4 cup chopped frozen chilies
  • 2 cups diced potatoes
  • salt to taste
  • boiling water
Directions
  1. Prepare chilies
  2. Cook potatoes until tender, but not mushy
  3. Lightly saute onion and garlic, add chopped chilies and diced potatoes
  4. If cooked potatoes are used, add water to cover and boil 10 minutes
  5. Serves 4.
