GREEN CHILE AND SQUASH
  • Ingredients
  • 7 to 12 green chilies,
  • OR 1/2 cup frozen chilies
  • 2 cups cubed summer squash
  • 1 small onion salt to taste
  • 1 cup fresh or frozen corn(optional)
  • 1 tablespoon fat
Directions
  1. Clean and prepare chilies
  2. Remove stems and seeds
  3. Lightly saute chopped onion, add squash and corn
  4. Cook slowly in little or no water until tender
  5. Add chopped chilies, salt, and serve
  6. Makes 6 to 8 servings.
